Barding

Barding is a delicious technique of increasing the moisture and tenderness of meat by adding bacon. The process involves applying bacon to the meat prior to cooking by either wrapping the meat with strips of bacon or just laying them across the top prior to cooking.

Generally barding is used for lean meats such as game bird and filet mignon but those who don't mind an overly greasy meal may choose to use it for fattier cuts.
